Irani chai, also known as Hyderabadi dum chai, is a unique type of tea that originated in the Indian city of Hyderabad. It is made with black tea, milk, sugar, and spices, and is typically served with a dollop of condensed milk on top.

What makes Irani chai so special is its rich, creamy flavor. The milk is boiled for a long time, which gives it a thick, velvety consistency. The spices, such as green cardamom and cinnamon, add a subtle warmth and depth of flavor.

Irani chai is traditionally made in a sealed pot, which is called dum in Hindi. The dum process helps to infuse the tea with the flavors of the spices and milk.

Here is a long description of Irani chai recipe:

Ingredients:

  • 2 cups water
  • 2 tablespoons black tea leaves
  • 1/2 cup sugar
  • 4 green cardamom pods, crushed
  • 1 cinnamon stick, broken into pieces
  • 1 cup milk
  • 1 tablespoon condensed milk

Instructions:

  1. In a medium saucepan, combine the water, tea leaves, sugar, cardamom pods, and cinnamon stick. Bring to a boil over medium heat, then reduce heat to low and simmer for 40 minutes, or until the tea has a deep, rich flavor.
  2. Strain the tea into a heatproof pitcher.
  3. In a small saucepan, heat the milk over medium heat until it comes to a boil. Reduce heat to low and simmer for 10 minutes, or until the milk has thickened slightly.
  4. Stir the condensed milk into the hot milk.
  5. To serve, pour the tea into cups and top with the hot milk mixture.

Tips:

  • For a stronger chai flavor, use more tea leaves.
  • If you don’t have a sealed pot, you can cover the saucepan with a lid and weight it down with a heavy object.
  • You can also add other spices to the chai, such as ginger, star anise, or nutmeg.
