What makes Irani chai so special is its rich, creamy flavor. The milk is boiled for a long time, which gives it a thick, velvety consistency. The spices, such as green cardamom and cinnamon, add a subtle warmth and depth of flavor.
Irani chai is traditionally made in a sealed pot, which is called dum in Hindi. The dum process helps to infuse the tea with the flavors of the spices and milk.
Here is a long description of Irani chai recipe:
Ingredients:
- 2 cups water
- 2 tablespoons black tea leaves
- 1/2 cup sugar
- 4 green cardamom pods, crushed
- 1 cinnamon stick, broken into pieces
- 1 cup milk
- 1 tablespoon condensed milk
Instructions:
- In a medium saucepan, combine the water, tea leaves, sugar, cardamom pods, and cinnamon stick. Bring to a boil over medium heat, then reduce heat to low and simmer for 40 minutes, or until the tea has a deep, rich flavor.
- Strain the tea into a heatproof pitcher.
- In a small saucepan, heat the milk over medium heat until it comes to a boil. Reduce heat to low and simmer for 10 minutes, or until the milk has thickened slightly.
- Stir the condensed milk into the hot milk.
- To serve, pour the tea into cups and top with the hot milk mixture.
Tips:
- For a stronger chai flavor, use more tea leaves.
- If you don’t have a sealed pot, you can cover the saucepan with a lid and weight it down with a heavy object.
- You can also add other spices to the chai, such as ginger, star anise, or nutmeg.
